Dr. Everett L. Martin, WSU assistant professor of animal science and assistant animal scientist, trims the fat and skin off a ham. Behind Dr. Martin hang pork carcasses which he slaughtered in the recently completed Phase I kill laboratory of the new WSU meats laboratory.
